Red pepper, chicken and spinach fritatta

Serves 4, syn free on red and EE

150g spinach leaves
1 red pepper, finely chopped
6 spring onions, finely chopped
1 pack of cooked chicken pieces
6 eggs, beaten
salt & pepper
mixed herbs

Fry the onions and pepper in a frying pan with fry light
Add the spinach and cook until wilted
Add the salt and pepper, herbs and beaten eggs
Add the chicken
Fry for 5-6 minutes
Put under the grill for 5 minutes or until the fritata is cooked through
